With that not keeping her busy enough, Bec has also opened the popular Charlies of Darwin restaurant and cocktail bar and Raintree Lantern Terrace. It is here, on display you can see the distillery set up in all of its glory! Bec regularly goes out foraging to harvest Northern Australian botanicals to share with the world.
We have a 500 litre hybrid still as well as our experimental 50 litre still called “little bidds”. We individually distill the botanicals so you can taste the Top End. Specially as a uniquely territorian botanicals are fleetingly seasonal. The shiny cooper stills adds a glamorous backdrop to the drinking and dinning experience at Charlie's, that is if you can find the hidden entrance.
